The one about pie 9
Almost up to date at last! Pie 9 was made tonight – it was supossed to be goat’s cheese & mushroom polenta pie, but it turned out to be more like mushroom and artichoke pie with a feta and polenta crust. The filling was pretty good, but I don’t think I will bother with a polenta crust again 🙁 It just lacked taste.
For the filling:
- 125g mushrooms
- oil
- butter
- 1/2 onion, chopped
- 1 stick of celery, chopped
- 2 Jerusalem artichokes, peeled and chopped
- 1tsp muscovado sugar
- splash of apple juice
- 75ml vegetable stock
- 1/2 jar of roasted peppers, drained and roughly chopped
- parsley, chopped
- thyme
- 1tsp wholegrain mustard
- 75ml double cream
- 100g feta cheese
- Fry the mushrooms in oil & butter for 5-10 mins. Remove from the pan.
- Fry the onion until soft and golden. Add the celery and artichoke to the pan and cook for 3-5 mins.
- Stir in the sugar, juice and stock, allowing to simmer for a minute.
- Add the peppers, parsley, thyme, mustard and cream. Season to taste.
- Pour into yor pie dish and sprinkle the crumbled feta over the mixure.
- Top with your choice of “lid” and bake accordingly.
