The one about pie 9

Almost up to date at last! Pie 9 was made tonight – it was supossed to be goat’s cheese & mushroom polenta pie, but it turned out to be more like mushroom and artichoke pie with a feta and polenta crust.  The filling was pretty good, but I don’t think I will bother with a polenta crust again 🙁  It just lacked taste.

For the filling:

  • 125g mushrooms
  • oil
  • butter
  • 1/2 onion, chopped
  • 1 stick of celery, chopped
  • 2 Jerusalem artichokes, peeled and chopped
  • 1tsp muscovado sugar
  • splash of apple juice
  • 75ml vegetable stock
  • 1/2 jar of roasted peppers, drained and roughly chopped
  • parsley, chopped
  • thyme
  • 1tsp wholegrain mustard
  • 75ml double cream
  • 100g feta cheese
  1. Fry the mushrooms in oil & butter for 5-10 mins.  Remove from the pan.
  2. Fry the onion until soft and golden.  Add the celery and artichoke to the pan and cook for 3-5 mins.
  3. Stir in the sugar, juice and stock, allowing to simmer for a minute.
  4. Add the peppers, parsley, thyme, mustard and cream.  Season to taste.
  5. Pour into yor pie dish and sprinkle the crumbled feta over the mixure.
  6. Top with your choice of “lid” and bake accordingly.
